- Preheat oven to 325°F. Line a cupcake tin with liners.
- Mash bananas in a bowl, put aside.
- In a medium bowl, mix flour, baking soda and salt with a wire whisk. Put aside.
- In a big bowl cream butter and 1/4 cup maple sugar with an electrical mixer.
- Add egg whites, mashed bananas, maple syrup, apple sauce and vanilla; beat at medium velocity till combined nicely, scraping down sides of the bowl.
- Add flour combination, then mix at a low velocity till simply mixed.
- Pour the batter into the ready muffin tin. Unfold the pecans evenly over the muffins.
- Bake the muffins on the middle rack for 30 to 35 minutes, or till a toothpick inserted within the heart comes out clear.
