Italian Chopped Salad is my favourite fast lunch I like to whip up with elements I normally have available in my fridge! So easy, and may simply be modified to fit your style.
It’s low-carb (Keto), gluten-free and simple to whip up! I make this so typically, particularly after I don’t plan what I’m going to have for lunch that I assumed I’d share. This model is made with Genoa salami, mozzarella, roasted purple peppers, tomatoes, cucumbers and lettuce topped with oil and purple vinegar.
Since I normally whip this up with the elements I’ve available, my salad seems completely different every time I make it, listed below are some variations I normally make.
Variations:
- Swap the salami with sopressata or proscuitto
- Swap a number of the Romaine lettuce with radicchio or butter lettuce
- Change the salami with canned chickpeas to make it vegetarian
- Additionally nice with laborious boiled eggs
